ref-manual: Added descriptions for three UPSTREAM* variables.

Fixes [YOCTO #9671]

Put in descriptions for the following variables:

 * UPSTREAM_CHECK_GITTAGREGEX_pn
 * UPSTREAM_CHECK_URI_pn
 * UPSTREAM_CHECK_URI_pn
